Victoria's Cookbook (La Cocina de Victoria)

My mother never wrote down a single recipe.
I measured all 120 of them.

Every dish from her ranch kitchen in Guanajuato, with the exact measures and the why under every step, so it comes out right the first time.

The honest math

Nobody adds up what "I don't know what to cook tonight" really costs. So let me count the centavos, the way it really happens in a month.

The tired-night way

  • Takeout, twice a week$25 to $40 a night
  • Delivery fees and the tip$8 to $12 every order
  • Salsa from a jar$5, never as good
  • Rotisserie chicken, eaten once$9, half of it thrown out
  • Groceries bought without a planwasted every single week
A typical month$250 and up

Victoria's kitchen

  • Rice, beans, masa: the basea few dollars a meal
  • One chicken, plannedthree dinners
  • The five salsas, from scratchpennies a jar
  • A week written on one listnothing wasted
  • The knowing of howthis book
The same monthfar less, and it tastes like Sunday

Your numbers will be different. The point does not change: one skipped takeout night pays for the book.

"I made the frijoles de la olla exactly as written and my dad went quiet at the table. Then he said 'these are your grandmother's.' I cried in the kitchen."

"I'm a terrible cook and I have never once had rice come out right. Page two of the rice chapter fixed it. The 'why' under each step is the whole thing."

"Bought it for the salsas and stayed for the letter at the front. It reads like my tía talking. Also the swap table saved my chilaquiles when the store had no tomatillos."

Victoria Mendoza in her kitchen

Victoria Mendoza

My mother cooked for ten people every day of her life on a ranch outside San Francisco del Rincón, in Guanajuato, on almost nothing, and she never once measured. She cooked by the smell and by the sound of the pot. From the time I was fourteen I followed her around the kitchen with a school notebook and measured what she would not. This book is that notebook, finished, written the way she talked: plain, warm, and a little bossy, with the reason under every step.

I will not sell you restaurant tricks. I will teach you the way a mother teaches, standing next to you at the stove. Salt early, sour late, flame low. That is the whole trade.

Questions, answered honestly

Is this a printed book you mail me?

No, and I want you to know it before you spend a dollar. It is a PDF: a file that opens on your phone, your tablet or your computer the moment you pay. Nothing arrives in the mail. You can print any page you like at home, and the 120 recipe cards at the back are made to be printed and kept by the stove.

I am not a good cook. Is this too hard for me?

It is written for somebody standing in the kitchen with nobody to ask. Exact measures, numbered steps, and under every step the reason it is done that way, because once you know the why you stop needing the recipe. And after every recipe there is an honest "if it went wrong," so a bad pot gets saved instead of thrown out.

Do I need special ingredients I can't find?

Chapter 2 is the whole pantry: twenty-five things, most of them already in your cupboard, with a swap table for when your store does not carry something. Nothing in this book needs a specialty shop.

Is it in Spanish or English?

It is written in English, warm and plain, with the little Spanish words a mother would use: mija, olla, comal, sazón. If you grew up hearing them, you will feel at home. If you didn't, you will learn them by page ten.

I am not good with computers.

You do not need to be, mija. You press one button and the book opens the way a photo opens. No account, no password. If it does not open, write to me and I will walk you through it myself, or give your money back.

Is this a subscription? Will you charge my card again?

No. One payment, one time. No membership, no monthly anything, no free trial that turns into a bill. I could not charge you again if I wanted to.

What if I lose the file?

Your link lives in your email, so that is the thing to keep. If you lose it, open the Hotmart email again or write to me with the email you bought with, and it comes right back to you.

What if I don't like it?

Write to me within seven days and I give your money back, and you keep the book. I would rather that than have you feel taken.
